There’s nothing better in the summer time than vegetables straight from the garden patch.  And this Semi-Homemade Fried Zucchini is no exception.

2-3 small zucchinis
1 medium onion
Butter… lots of butter
Salt and Pepper to taste

Dice your zucchini into bite size pieces, if you’ve got huge zucchini’s, you will want to de-seed them and remove most of the peel as you’ll get soggy zucchini with hard outsides.  And that’s no bueno 😦  Dice your onion into slightly larger than bite size pieces.

Melt butter in pan.  Once the pan is good and hot, and your zucchini and onion.  Salt and pepper to taste and saute till the zucchini is al dente or to your taste preference.

Pair this with the Semi-Homemade Baked Chicken and the Semi-Homemade Stuffing and you’ve got a full Sunday Supper.
