Sometimes, you just want some good old-fashioned comfort food. And there’s nothing better than eggs, potatoes and meat. Especially when all it takes is a little chopping and dumping some bags.
1 medium onion
Bell Peppers (any color, I like one of each)
a bag of pre-made meatballs
a bag of frozen Potatoes O’Brien
Heat a large frying pan with a little oil in the bottom. Chop the onion and the bell peppers, saute till the onions are sweated. Meanwhile, chop the meatballs into bite size pieces. Add meatballs to your frying pan till they’re warmed through. Add the hashbrowns till they’re heated through. Set on low while you fry eggs in another pan.
Plate with your eggs on top. Props if you make your eggs over medium!
